I've never kept goldfish so forgive my ignorance. :) I assume it's normal for them to look extremely bloated ?

So technically normal fancy goldfish you'd get from a local pet store would not necessarily grow to be the same shape as the ones you've pictures ?

Most of the fancy goldfish at the LFS are not a really good grade. They my or my not have a good body shape.
It's kind of like breeding show dogs
Most for my fish are imported bloodlines from China or Singapore were most of your show quality goldfish are breed

and I take it the exploding look is okay for them?
I mean I would think that would cut their lifespan down (ie. harder to move, feed, etc)?

I was wondering about that too. Several you see in the pictures are literally sitting on the bottom of the tank.

I would think it would be similar to the balloon molly.
not living as long because the organs are basically smooshed due to the ballooning effect (it's basically a defect that is being enhanced on species such as the molly)

Egg body is the breed standard for alot of the breeds
No shouldn't bottom sit it a sign of stress in egg body goldfish.
You should cull any fish that not a good swimmer you don't want fish that can't swim
But you have to remember these fish have been in a small tank for 4 days
Many like mine were transported long distances to the show
Most were taken off food 4 to 7 days before the show to cut down on waste
Many are in very different water that what they were raised and live
Life span is 8 to 10 in the aquarium with good care a few more years in the pond, they're at their best at 3 years of age.

They've got good top/bottom symmetry, but I see some bent dorsal fins. Maybe the water flow was too much for a good picture? Were there no comets, wakins, tosakin, bristols, commons, koi?

It depends on what breed your dealing with. I breed
    Side-View Ranchu,Top-View Ranchu,Ryukin,Oranda,and
Dragon Eyes all have very different breed standards
I breed more Ranchu that all the other breeds put
together but I'm working with more Ryukin this year
    that in pass years.

I rise between 250 and 350 good quality fish a year
